Cheesy Sausage Stuffed Zucchini
1 large zucchini
2 8-ounce packages cream cheese, softened
1 ½ cup shredded Parmesan cheese
½ sweet onion, chopped
3 cloves garlic, chopped
1 lb hot sausage
½ cup dry white wine
3 Tbl italian parsley, finely chopped
1.Preheat oven to 375 degrees.
2.Wash zucchini and cut lengthwise.
3.Scoop out insides of zucchini until outer edge is about a quarter inch thick.
4.Finely chop scooped out parts of the zucchini.
5.Chop onions and garlic.
7.Once fully cooked, add in chopped zucchini, onion and garlic and cook until onions are translucent and zucchini is tender.
8.Add dry white wine to deglaze pan, getting all the browned sausage stuck to pan off the pan and stirred into mixture. (This is where all the good flavor is.)
9.Mix together cream cheese and parmesan cheese, and 2 tbl. parsley.
10.Add sausage mixture to cheese mixture, mixing well.
11.Spoon into zucchini halves and bake for 45-60 minutes.
12.Remove from oven and let cool. Sprinkle with remainder of chopped parsley.
