My 4 year old came to me today and told me he wanted to have “Popsy” Dogs after seeing a commercial for them while playing a computer game.
I knew he was talking about the Crescent Roll dough kind which are not exactly on my “good for you” list.
So I came up with my own version, creating a dough from tapioca flour. They turned out really yummy!
All three of my kids ate them up. I was super happy, since it’s very rare that they all three like what I cook for dinner on the same night.
Pigs In a Blanket (Primal Style)
1 package Mini hot dogs (I used Trader Joe’s uncured, nitrate-free mini hot dogs)
6 slices Bacon
For the Dough:
1 cup Organic Tapioca Starch
1/3 cup Parmesan cheese
4 Tbsp melted grass-fed butter
1 organic pastured egg
Preheat oven to 400 degrees. Combine all crust ingredients into mixing bowl and mix with hands until consistency is doughy and can be kneaded by hand (if dough seems too dry add a couple drops of water).
Roll dough into small balls. Place a mini hot dog and a small piece of bacon on top. Smoosh into dough ball.
Wrap edges of dough up around hot dog.
Place on baking sheet.
Bake for 30 to 40 minutes until edges start to brown.
